You switch to the new yarn at the very last step of the stitch

Step-by-Step: How to Change Colors Seamlessly

(This example uses double crochet)

Step 1: Yarn over

Start your next double crochet as usual using your current yarn and yarn over.

Step 2: Insert your hook

Insert your hook into the next stitch just like normal.

Step 3: Pull up a loop

Yarn over and draw back through the stitch.

You should now have 3 loops on your hook.

Step 4: Yarn over

Yarn over your hook again.

Step 5: Pull through 2 loops

Pull through the first 2 loops.
